Using that option you will also be able to replay side missions (including all the Tombs) later on in the game. AC:Brotherhood and Revelations allow you to skip cutscenes. You do it in the pause menu. In AC1 you can skip some dialogue by jumping at the person just before you activate them, causing them to stumble and cut the dialogue short.
